Blues Hall-of-Famer Bernie Federko teamed up with broadcaster Joey Vitale and Enterprise Center Senior Executive Chef Matthew Eaton to walk us through the creation of his legendary custom "Bernie Burger" (and side of poutine) in the latest episode of Dishin' It Up With Joey V. presented by Schnucks.

For the burger:
Beef patties
Paprika
Smoked salt
Pepper
White onion, chopped
Philly meat
Oil
Brioche bun
Butter
Cheez Whiz
Sliced provolone
Top with lettuce, pickles and tomatoes
For the poutine:
Frozen french fries
Oil
Cheese curds
Fry seasoning
Chicken gravy
Chopped chives (for garnish)
To make the burger, start by seasoning burger on the grill with a combination of paprika, smoked salt, and pepper. While the patty cooks, grill desired amount of chopped onions in a splash of oil. After 1-2 minutes, add Philly meat directly on top of the onions. Once meat begins to brown (3-5 minutes) begin to chop and mix with the grilled onions.
Next, butter the bun and place both buttered sides on the grill until toasted.
Once Philly meat and patty are at your desired doneness, top Philly meat with cheez whiz and burger patty with provolone cheese. Then combine on the toasted bun and top with lettuce, tomato and/or pickle.
To make the poutine, start by preparing the french fries and tossing them in fry seasoning. Mix with room-temperature cheese curds and top with warm chicken gravy and garnish with chives.
